Filling the obvious gap between our Savernake Knife and the Nimble Chopper, this is an excellent lightweight utility knife for those who like a bit of oriental influence in the design of their knives. It's equally at home decimating carrots as it is turning chives into lots and lots and lots of very small pieces. With a hollow grind running down from a spine that starts at a little under 2mm and gets thinner, it really feels truly splendid. This superb blade, made from top quality Swedish stainless steel, is complimented with a classy American walnut handle and complimentary red liner. Savernake Knives takes an uncompromising approach to making knives, with a laser focus on 3 main areas: - Materials: We are constantly re-examining the materials we use to make the best knives possible, from the steel for our blades to the materials in our handles. - Geometry: Our signature hollow grind achieves unrivalled light-weight knives with superior all-round performance. - Comfort: Every part of our knives has been designed from the ground up, and our handles are no different. Countless iterations & experimentation have led us to where we are today. Your knife should really require very little maintenance, less occasional sharpening and frequent honing. If you have a non-stabilised wooden handle then the odd touch-up with Danish oil - or equivalent - will be all you need. The main thing to remember is not to put your knife through the dishwasher. Not only will it damage the handle, the steam and salt will - even with the best stainless steel - cause corrosion, particularly at the cutting edge. Lastly, if you have a finely-balanced, delicate filleting knife then don't use it to hack your way through a recalcitrant leg of lamb!
