We use 18/10 as this grade of stainless steel is corrosion resistant due to the presence of chromium and nickel. All of our pans have a stainless steel base as this provides the magnetism to use on an induction hob. A bain marie is perfect for melting chocolate and cooking custards and sauces without scorching or curdling. Its gentle application of heat can even be used for baking delicate desserts, such as cheesecakes. Simply fill the lower compartment with water and heat over a hob. The heated water will not exceed 100°C, allowing gentle, controllable cooking of food placed in the upper compartment.
